If you are married, you should file jointly. Only an unmarried person may file as Head of Household. Filing jointly will be preferable from a tax standpoint in any case.
The answer will depend on how long your husband has been in jail. To qualify as head of houshold you have to have been the only adult in the household for a specific period of time.
